Hatch Green Chile Black Bean Soup


Serves 6

 

INGREDIENTS:

2 (15-ounce) cans Black Beans, with juice
1 cup Borracho Cooking Sauce
½ cup diced onion
1 avocado cubed
crumbled Queso Fresco
¼ cup cilantro, chopped

 

TO PREPARE:

In a blender or food processor combine the Black Beans and the Borracho Cooking Sauce. Blend on low speed until smooth. Pour blended mixture into a medium sauce pan. Simmer on medium low heat for 20 minutes.


Prepare individual bowls and top with onion, cilantro, avocado, and queso fresco.
