Tostadas Borrachas


Serves 4

 

INGREDIENTS:

4 large tostadas

1 (15-ounce) cans Pinto Beans, drained and rinsed
1/3 cup Borracho Cooking Sauce
½ onion, diced

2 large petals of cactus diced and fried
red enchilada sauce
shredded cheese or crumbled Queso Fresco
¼ cup cilantro, chopped

 

TO PREPARE:

Mix beans and Borracho Cooking Sauce in a small sauce pan and bring to a simmer on low heat. Spoon a thin base of warmed enchilada sauce on each tostada. Sprinkle diced cactus on tostadas. Next scoop about 1/2 cup of beans onto tostadas.


Top with onion, cilantro, and shredded cheese or queso fresco.
